Can you use fresh pumpkin in a recipe like canned pumpkin? How do you cook it?

    my mom would either boil the pumpkin like you do with potatoes, or she would roast it.
    just untill a knife can go in easily.
    then you remove the flesh from the skin and you can puree it there, store and freeze.
    if you go with the boiling method you should let it drain a little after you puree, take off some of the excess water, cos there will be quite a bit in there.
    and yup, you just use it like canned.

    From what I understand, you can boil the pumpkin like you would boil potatoes for mashing, but I believe you would need to add pumpkin pie spice. I’m sure you could cook the pumpkin and can it like you would can preserves or jams. I’ve heard that smaller pumpkins are better to use and that the jack o’ lantern type can be grainy. But maybe if you put it in a food processor or blender, instead of using a masher, it would work pretty good. I’d love to have your recipe if it works! I can’t find a recipe that DOESN’T call for canned pumpkin anywhere!!
